History
1912 | The first generation of Fukui Moritaro begins with the establishment of Fukui Sake Brewery with alcohol in wells with a crest of the former Ogaki Nitta clan at Fukue Town in Atsumi-gun (present Tahara-cho). |

1952 | As the second generation Moritaro Fukui expanded its business, transferred the brewery to 4000 tsubo of the site of the former Army 18 solidarity in Nakahama Town, Toyohashi City. |
1963 | After the second generation Moritaro Fukui died, brother Toshiki Fukui assumed office as president. Yoshiko Fukui’s wife Yoshiko assumes office. |
1984 | Takahisa Akai of the 4th generation, the Toyohashi Commerce and Industry Chamber of Commerce and Industry in 1995 received the 14th Science and Technology Award, a compact and hygienic brewing system, (drastically reduce the huge amount of work required for labor intensive type building, Using sake made) Develop “FOP type brewing system” and complete this. |
2000 | We also invite wedding ceremonies to 3000 tsubo doubling the effective use of land and construct a compact and efficient new warehouse to the remaining 1000 tsubo. The origin of Shikaio
Shikai (four oceans) means the whole world. Thus, the King of Shikai means the best sake-maker all over the world, and also means Japan’s absolute sake among the Pacific Ocean, the Japan Sea, East China Sea and Okhotsk Sea.Commitment of Fukui Brewery
- vaunted water
We use water from our well for sake making. Water from Tenryu-river, which is famous for wild water, contains high proportion of mineral and is soft water. The taste is deep but easy to drink, which is completely different from commercially supplied soft mineral water. The water is indispensable for our sake making. - century-long traditional technique
Small kilns we are using is not so productive but can enhance the quality of taste. We have faced delicate sake for a century and acquired lots of knowledge and technique for making sake. Now, we have 12 licenses for making sake. Responding to customers’ requests has contributed to our technique. - human
To make a good sake, and for drink a good sake, The “human” element is particularly important. Appreciate to human, and harmony makes a good sake.
